Stéphane Jégo - Chez l'Ami Jean

Chez l'ami Jean, how to describe this gem?

Is it the location in the heart of Paris? The place? an old basque bistro with cured ham hanging from the ceiling. Is it the buoyant atmosphere where elbow-to-elbow diners heartily share their copious dishes?

Probably yes.

What certainly makes this bistro completely addictive is the crazy genius of chef Stéphane Jégo who changes his menu daily, who assembles every single dish himself, whose uttermost desire is the satisfaction of his clients while never being fully satisfied himself.

Chef Stéphane Jégo gets pride in sourcing some of the most difficult-to-find products (for example live 'pibales' which are baby eels or incredible game during the hunting season).

Yet one of his most splendid dish is the 'beef an carrots', something which you would never have selected in a restaurant when other items on the menu includes sweetbreads, wagyu bone-in rib etc. 'Beef and carrots' is theoretically the most boring canteen food. Yet Master Jégo can re-invent a brilliant dish which makes your tastebuds discover something you thought you knew all about.

The same applies for his internationally famous rice-pudding which will be the subject on its own in a forthcoming blog post.

Chez l'ami Jean is the ultimate bistro, a parisian bistro on steroids. You just won't spend a quiet evening there but expect an unforgettable foodie experience.
