Thierry Marx - Château de Cordeillan-Bages

With Thierry Marx having moved to Paris in the Mandarin Oriental for some time now, it is probably worth revisiting his genius and the wonders he had created in the Bordeaux region near Pauillac.




Seared Royal Crab 

Eel in Surf and Turf, cereal toast and sour apple

Uncooked Warm soufflé, oyster and Cahmapgne, sea-water crisp

Cucumber heart with caviar, clam foam, Gillardeau oyster

Abalones

Low-temperature Turbot, seaweed butter vegetables

Squid, piquillos and pork crisp

Lobster, verbena and lemongrass steam, turnip pulp and lemon confit

Spaghetto (!) with veal sweetbread, porcini and truffle 

Conical quail, tagine flavours

Vine-smoked beef fillet, confited potatoes


Dynamising strawberry, frozen lemon and basil, olive oil crisp

Olive oil biscuit, Campari sherbet and mascarpone

Deconstructed lemon tart

Raw brioche dough and fermenting milk

Tonka bean frozen meringue crisp

Chocolate truffle (Tuber Melanosporum!)
